Fridays are special at Paranga: throughout April, there’s a celebration of mussels and chips. Paranga is serving them at lunch and dinner every Friday, when a different cooking style will be chosen for the mussels themselves – from Piemonte, Sicily,Emilia-Romagnaand theValle D’Aosta. The price per person of €23 includes a glass of white wine or a bottle of beer. This includes three hours of free parking at the Eden car park by InterContinental Malta.
Paranga has recently reopened for spring by the sea with an Italian-inspired menu using the freshest Mediterranean ingredients. Diners can choose from a tempting list of Italian dishes that includes grilled scampi set on sautéed asparagus, seaweed powder and beetroot olive oil; swordfish carpaccio, with orange, capers and onion, dressed with citrus flavoured oil; red prawn sushi, grilled water melon, soya cloud and wasabi dressing; veal and beef ravioli, with a Pecorino cheese velouté; tagliatelle with seafood in a light prawn flavoured bisque; risotto with scampi, candied orange and fizzy mint; tagliata of fillet of beef cooked with 12 years old Jameson whiskey, served with artichokes, pine-nuts and thyme oil; 36-hour confit of pork belly, with a warm cannelini bean salad, and beetroot caramelized sauce, slow cooked organic chicken breast, truffle sauce and grilled endives with an orange perfume. The dessert menu is a special one, and a particular favourite with patrons: pistachio crème brûlée with croquant and fresh fruit; pannacotta al Frangelico in zuppa di cioccolato e caffe e frutti di bosco; crunchy Belgian chocolate mousse with praline Bavaroise – and those are just a few of them.
